Welcome to the fourth episode of our monthly news. Well, the situation here in Nepal is still uncertain. The number of cases are rising every day, but life always needs to move on. Here at Maya, we are all busy doing online classes and other stuff. Making the most of this time, I've been working on my cooking skills. I've learned how to make pizza, cake, creamy coffee (when I had to stir so much that I couldn't move my arm the rest of the day), Dutch hutspot, Spanish omelet, and many more.
Today, I wanna share with you this very delicious Ladakhi Pasta. Ladakh is a state in India above 3000m. The weather there is cold, and there's barely anything except mud and rocks. This mountainous desert is the home of Tibetan refugees. Since it's usually very cold, the people eat this pasta soup to keep them warm and provide them with nutrition.
How to make the dough: 2 cups of flour; 3 eggs; 1 teaspoon salt.
You should mix the eggs well and add flour gradually. Once the dough has the perfect texture, roll it out and make it in the shape you prefer.
How to make the soup: Boiled potato and green peas (MUST); ginger, garlic and chilli paste; cooking oil, tomato, onion, spices of your taste (turmeric, salt and cumin are a MUST); other veggies of your taste (I recommend you to not use bitter gourd, ‘cause it will ruin all the taste).
Now let's prepare the soup. At first, heat your pot and add oil. Once the oil is hot enough, add the paste you made earlier (ginger, garlic and chilly), and fry it for 10s. Then add the onion, and fry it until they turn golden brown. After that, you add the turmeric and cumin, then add the peas, fry them for a while, and then add the potato. Next, you might wanna add the veggies you have chosen. Then add the spices and salt, as per your taste. Now add the cut tomato and fry them for a little while. Once you think it's ready, you can add some water and make it soupy according to your preference. Boil them for 2 minutes and add the pasta, then cover it for 5 minutes.
Ladhaki pasta is ready. Serve it hot, and enjoy your meal!
